Grilled 'Mac Daddy' Ribeye August 08 2017

Thank you to Gloria from Ohio for submitting this juicy two-day 'Mac Daddy' Ribeye recipe, created by her fiance´. While this recipe may only have a few ingredients, you better prep in advance because this king of steaks takes a full day to marinate. We aren't even going to give you a side dish for it because, well, it's a Mac Daddy Ribeye.

PREP TIME: 1 day

COOK TIME: roughly 30 mins 

Ingredients:

2 thick cut bone-in ribeye steaks

1/4 c Worcestershire sauce (give or take)

Cracker Boy Seasoning 

Cracker Boy BBQ Sauce

4 tbs unsalted butter

Prep — 1 Day Before Cooking

Take your 2 thick cut bone-in ribeye steaks and place on a cutting board. With a fork, poke holes in your steaks so that seasonings can absorb all the way through. Rub steaks with Cracker Boy Seasoning on both sides. Place steaks into a plastic ziplock bag and place the bag in a baking dish to keep steady. Pour Worcestershire sauce into the bag and zip up. Place dish in the fridge to marinate overnight or up to two days. 

Directions 

1. Set your grill on high and allow to warm. Place a cast iron skillet on the grill, lid closed, and allow to preheat, about 10-15 minutes. 

2. Place steaks on the hottest part of the grill and cook for 5 minutes with the lid closed.

3. Wait 5 minutes and open the grill, putting the butter into the skillet that is preheated. Quickly flip the steaks, grill side up, into the skillet. Cook, basting with butter, for 5-7 minutes.  

4. Close the lid and continue cooking until the internal temperature of the steak is 125 to 130 degrees F for medium rare, about ten minutes. Cook a little longer for well-done. 

5. Remove pan from the grill and pour on Cracker Boy BBQ Sauce (room temp). Let stand, covered, for 10 minutes. 

Serve your Mac Daddy Ribeye with whatever you please. We like roasted potatoes and some garlic green beans. 

 

 


Vegetable Medley with Shrimp May 11 2017

 

 

This one-dish recipe comes from Cracker Seasonings customer Linda from Kentucky! Her family loves fresh vegetables, so she created this recipe as a fast and easy way to fix meat and produce together!  What's so great about this recipe is that if you aren't a fan of shrimp, you can make it with chicken, beef or pork cut into small pieces. You can bake this dish in the oven, like Linda does, or you can throw the whole pan on the grill for some outdoor cooking this summer! 

PREP TIME: 10 mins

COOK TIME: 30-45 mins 

Ingredients:

 

3 medium yellow summer squash, sliced

3 medium zucchini, sliced

3 bell peppers, sliced and cleaned

1-2 onions, chopped

1-2 c mushrooms, sliced

1-2 c cherry tomatoes, whole

8 medium new potatoes with skins, sliced

1 lb shrimp, peeled and deveined 

1/4 c olive oil 

Cracker Boy Seasoning to taste 

Directions: 

1. Preheat oven to 400 degrees.

2. Place sliced vegetables on a large baking pan, adding shrimp and tomatoes to the mixture. 

3. Drizzle olive oil over the veggies and shrimp and toss.

4. Sprinkle Cracker Boy Seasoning over vegetables and shrimp and toss. Then, sprinkle with seasoning again right before you place into the oven.  

4. Bake in oven at 400 degrees about 30 to 45 minutes or until vegetables are tender.  


Awesome Avocado Alfredo May 01 2017

This delicious pasta recipe is by Nicole from Livingston, NJ, who created it at the age of 13 as a healthy alternative to please her family's liking for creamy pasta! This recipe features the use of avocados to create a rich pasta sauce without the use of butter, cream, milk, or excess oil. She uses salmon as the protein to make it filling and full of essential nutrients, and finishes it off with parmesan and breadcrumbs in the oven for a tasty crunch. It's a modern Alfredo with all the health benefits!

PREP TIME: 5 mins
COOK TIME: 30 mins

Ingredients:

Filet of salmon (6 oz)

8-10 oz rotini pasta

3 cloves of garlic (finely minced)

1 head of broccoli

4 tablespoons vegetable oil

2 ripe avocados

1 teaspoon Cracker Boy Seasoning

Cracker Boy Chili Seasoning

Salt

Pepper

Parmesan

Lemon

 

Directions:

 

1. In a pot, boil enough water to cook the pasta. Add salt to the water. 

2. Meanwhile in a separate pan, heat the oil and add the garlic. Once the oil is hot, add the salmon and broccoli and pan sear the fish on both sides.

3. Once the water boils, pour in the pasta and cook according to the box instructions. Drain the pasta once cooked al dente.

4. Once the salmon is fully cooked, use a wooden spoon to break it into bite sized chunks. This way, every bite has some salmon.

5. In a bowl, mash up 2 avocados with a fork or spoon. Add salt, pepper, and Cracker Boy Seasoning to taste. For a little spice, add a pinch of Cracker Boy Chili Seasoning. Squeeze in the juice of 1/4 of a lemon for some freshness! Add the mashed avocado to the pan with salmon and broccoli. The heat will "melt" the avocado and give it that cream like consistency. Evenly coat the salmon and broccoli with the avocado. Add the cooked pasta and coat it evenly.

6. Pour the pasta in an oven safe dish and add the breadcrumbs and parmesan on top.

7. Put the casserole under the broiler until the bread crumbs and parmesan mixture turn golden brown!

8. Serve hot to friends and family, and wait for compliments! Serves 5. 

Notes: For a gluten free option, use gluten free pasta. Use rotini or shelled shaped pasta so that the avocado sauce can hug the ridges of the noodle. The smaller the broccoli is chopped, the faster it will cook, so be mindful of when you put that in the pan as you don't want to overcook the broccoli! 

 

 


Lemon Pepper Whole Chicken April 03 2017

Tired of bland poultry? Kick dinner up a notch with this easy and simple Lemon Pepper Whole Roasted Chicken. What's great about this recipe is you can enjoy the chicken for days after! The flavors go well with roasted potatoes and vegetables, and the leftover meat makes for a mean chicken and rice soup. 

PREP TIME: 15 mins

COOK TIME: 1 hour 

Ingredients:

5lb whole chicken, washed & patted dry

2 Tablespoons extra virgin olive oil


½ cup butter, softened 


2 springs fresh rosemary, diced 


Cracker Boy Lemon Pepper Seasoning


Fresh lemon juice (juice of 2 lemons)


Sliced lemons, sliced onions, spring of rosemary for cavity stuffing 

 

Instructions:

1. Preheat oven to 425.


2. Combine butter, olive oil and rosemary in a medium sized bowl. Set aside.


3. Generously season outside of chicken and inside cavity with Cracker Boy Lemon Pepper Seasoning


4. Brush the butter mixture onto the chicken covering up all of the chicken.


5. Squeeze the juice of 2 lemons all over the chicken.


6. Stuff the chicken with lemon slices, rosemary and onions. Tie together the legs if desired.


7. Place chicken in roasting pan. Cook for 45 minutes and then baste.


8. Return to oven and cook for another 15 minutes or until golden. Lightly tent with foil if chicken is browning too quickly.


9. Let chicken cool for 15 minute before carving.

1 medium potato for per person

1 tbsp. Cracker Girl Original Spicy Seasoning

1 brown paper bag

Directions: 

1. Cut up taters in small strips (like McDonald's french fries).

2. Cook until golden brown. 

3. Dump in brown paper grocery bag. Double bag for best results. 

4. Add Cracker Girl Original Spicy Seasoning and SHAKE.

5. Eat while hot.

Ingredients:

1 lb. lean ground beef, turkey or venison

2 tbsp. Cracker Boy Chili Seasoning

1 tsp. Cracker Girl Pepper Hot Sauce

1 Can Diced Tomatoes

1 Can Kidney Beans

1 Cup Sweet Corn

Directions: 

1. Brown meat in large skillet on medium-high hear. Drain fat. 

2. Stir in Cracker Boy Chili Seasoning, tomatoes and beans. Bring to boil. 

3. Reduce heat to low; cover and simmer 10 minutes, stirring occasionally. 

4. Stir in Cracker Girl Pepper Hot Sauce for an added kick!

Ingredients:

1 tablespoon Cracker Girl Spicy Seasoning

9 cups plain popped popcorn

1 cup granulated sugar

1/3 cup light corn syrup

1/3 cup water

1 teaspoon distilled white vinegar

1 teaspoon kosher salt

4 tablespoons unsalted butter (1/2 stick), cut into small pieces

1/2 teaspoon vanilla extract

Directions: 

1. Coat a large heatproof bowl with butter, vegetable oil, or cooking spray and place popcorn in the bowl.

2. Place sugar, corn syrup, water, vinegar, and salt in a medium saucepan and stir to combine. Place over high heat, stirring until sugar is dissolved, about 2 minutes. Bring to a boil and cook until mixture registers 260°F on a candy/fat thermometer, about 5 to 7 minutes. Remove from heat and stir in butter and vanilla until melted and smooth.

3. Place Cracker Girl Spicy Seasoning, sugar, corn syrup, water, vinegar, and salt in a medium saucepan and stir to combine. Place over high heat, stirring until sugar is dissolved, about 2 minutes. Bring to a boil and cook until mixture registers 260°F on a candy/fat thermometer, about 5 to 7 minutes. Remove from heat and stir in butter and vanilla until melted and smooth.

4. Using buttered or oiled hands, tightly press mixture (it may still be a bit warm) into 3-inch rounds. Place on waxed or parchment paper to cool completely, about 15 to 20 minutes.


Easy Blue Jimmy Crab Cakes November 19 2016

12 ounces of fresh crab meat

1 tsp. Cracker Boy Lemon Pepper Seasoning

1/2 Cup Mayo

1 Cup Bread Crumbs

1 Egg

1 tbsp. Fresh Lime Juice

1/4 Cup Red Bell Pepper

1/4 Cup Green Onion

Directions: 

1. Mix bread crumbs with Cracker Boy Lemon Pepper Seasoning. Set aside.

2. Mix all other ingredients. 

3. Roll mixture into balls. 

4. Dredge through bread crumbs mix. 

5. Flatten into patties. 

6. Cook in oil or butter until golden brown.

2 Cups Shredded Mozzarella Cheese

1 Cup Ranch Salad Dressing

Directions: 

1. Preheat over to 350 degrees.

2. Mix together all ingredients except chicken.

3. Pour into a glass baking dish. 

4. Top with 1 Cup chopped Fried Chicken Tenders.

5. Bake for 20-30 minutes or until lightly brown.

2-1/2 lb. chicken wings, split at joints, tips removed

Cracker Girl Spicy Barbeque Sauce

Cracker Boy Lemon Pepper Seasoning

Cracker Girl Original Spicy Seasoning

Directions: 

1. Heat oven to 450°F.

2. Toss wings with 2 tbsp. of Cracker Boy Lemon Pepper Seasoning and 2 tbsp. of Cracker Girl Original Spicy Seasoning

3. Spread wings onto rimmed baking sheet sprayed with cooking spray.

4. Bake 35 min.; drain.

5. Brush with Cracker Girl Spicy Barbeque Sauce; bake 10 min. or until wings are done.
