Spicy Mexican Street Corn July 30 2018

We know summer is all about burgers and hotdogs on the grill, and our Cracker Boy Seasoning and Cracker Boy Original Barbecue Sauce add just the kick your all-American summer staples need. But how about spicing things up at your next gathering with this Spicy Mexican Street Corn? It's sure to make any ordinary night a fiesta.

PREP TIME: 5 mins
COOK TIME: 10 mins

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream or Mexican crema
  • 1/2 cup crumbled Cotija or feta cheese, plus a little more for serving
  • 1Tablespoon Cracker Girl Spicy Seasoning (maybe more to taste)
  • 1/4 cup cilantro
  • 4 ears shucked corn
  • 1 lime, cut into wedges

  • Directions:

Light and preheat charcoal grill. While coals heat combine all ingredients except for corn and lime in a bowl and mix well. Set mixture aside. When grill is ready, place the corn on the grill and cook on all four sides until they get a nice brown char (about 7-8 minutes).

Remove from grill and toss in the cheese mixture bowl. Coat the corn all over with the mixture using a spoon. Plate the corn and sprinkle with the remaining cheese. Garnish with cilantro and lime wedges. This dish is even great served with our Jalapeno Citrus Sauce!
