  • pork brisket 
  • puff pastry 
  • caramalized onions
  • Cracker Boy Seasoning
  • Cracker Boy BBQ Sauce
  • Cracker Girl Spicy BBQ Sauce
  • 1 egg
  • 1 tablespoon water
  • butter

  • Directions:

    For Pork Brisket: 

    Preheat oven to 325 degrees. 

    Rub deboned pork brisket with Cracker Boy Seasoning. Heat butter in a dutch oven on the stove top and brown all sides of the pork brisket (about ten minutes total). Add some stock or roasting liquid to the dutch oven and place, covered, in the oven for about an hour until the internal temperature reads 160 - 170 degrees. 

    Slice brisket for the Pigs in a Blanket. 


    Turn oven up to 450 degrees. 

    Beat the egg with the tablespoon of water in a small bowl and set aside. 

    Melt 1 tablespoon butter and set aside. 

    Roll puff pastry out onto floured work surface. Cut pastry into 2 inch strips.

    Place pieces of brisket and small amount of onions onto one edge of the strip and roll up, brushing with egg mixture to adhere. 

    Continue until all the pastry and brisket is rolled. 

    Place the rolled pigs on a parchment lined baking sheet, and brush the top of the pastry with melted butter. 

    Bake for 20 minutes or until pastry is golden brown. 

    Serve with Cracker Boy BBQ Sauce (or Cracker Girl Spicy BBQ Sauce for added kick).
