Heat half of oil in a cast iron skillet. Add onions (thinly sliced). Cook until onions start to sweat, transfer to a bowl. Add more oil to the pan. Season ribeye with Cracker Boy Seasoning. Sear thin ribeye on both sides until done. Add onions back to pan with ribeye and toss. Spread mayo on the rolls. Pile meat on top of roll and add provolone cheese to the top while the meat is still hot (so the cheese melts)..
